1/2 cup of butter softened

1/2 cup vegetable oil

1 3/4 cup sugar

1 tsp. vanilla

2 large eggs

1/2 cup buttermilk, sour cream or yogurt

2 1/2 cups flour, self rising

1 TBS baking soda

1 tsp. salt

3/4 cup cocoa

3 cups shredded zucchini

1/2 cup chocolate chips


Preheat oven to 325 degrees. Grease 9 x 13 baking pan. Beat butter, oil, sugar, vanilla. Beat in eggs. Beat in buttermilk, a little at a time, alternating with flour and then add the cocoa. Fold in zucchini and chocolate chips and bake for 25 to 35 minutes until done.

For the icing:

One fourth cup cocoa; 1 stick of butter softened; 1 box of powdered sugar; Stir together, add 3 tablespoons coffee and add milk by the capful until smooth.

This is good even without frosting!
