1 1/2 Duncan Hines white cake mix
5 eggs
3/4 cup oil
1 small instant vanilla pudding
1 teaspoon coconut extract
2 cups buttermilk
Mix all ingredients together and bake in 3 nine inch pans at 350°. Cool Completely.
Icing :
Three sticks of butter softened
6 cups of powdered sugar
1/2 cup of cream of coconut
1 teaspoon of coconut extract
Blue food coloring
Whip butter and add powdered sugar 1 cup at a time. Mix in cream with coconut and coconut extract. Add food coloring to the desired color. Cover cake completely with icing.
Robin egg speckles:
1/8 teaspoon Brown food coloring.
2 drops of water
Mix
Using a flat small paintbrush flick speckles on to the cake.
For garnish, toast one cup of coconut and use as desired. Multiple Easter eggs bring it to life.
