Haricot Vert with Secret Sauce

Ingredients:

1 (12 oz) package of haricots verts or thin green beans

1 whole clove of garlic

1 teaspoon dried thyme

sea salt

1 tablespoon finely minced purple onion

2 tablespoons slivered almonds

2/3 cup roasted red peppers, diced

Secret Sauce:

1/4 cup olive oil

3-4 tablespoons dijon mustard

2 tablespoons balsamic vinegar

the juice of 1/2 lemon (about 1 tablespoon)

1 teaspoon wheat-free tamari sauce (or soy sauce)

sea salt and pepper to taste

Trim woody stems off of green beans. In a two-quart saucepan, add 1 inch of water, the whole clove of garlic, and the thyme. Add the green beans. Cover and bring to a boil. As soon as the pot boils, remove from heat. Leave the lid on to hold in the steam, and let it cool to room temperature. Remove the clove of garlic and drain thoroughly. Pat dry with a paper towel. Sprinkle with sea salt.

Stack green beans in a single row across a small serving dish. Top with purple onions and slivered almonds. In the center of the stack, arrange the diced roasted red peppers.

Combine Secret Sauce ingredients in a pint canning jar. Cap tightly and shake well. Pour dressing over salad just before serving. Alternatively, you can mix up all the ingredients in a salad bowl and serve.
