Mediterranean Seared Scottish Salmon

4 fresh Scottish Salmon Filets

1 cup extra virgin olive oil

1 cup assorted Mediterranean olives

1/4 cup capers

2 tbsp. Minced fresh garlic

2 tbsp. Fresh lemon juice

2 tbsp. Coriander

2 tsp.salt

1 tbsp. Black pepper

2 tbsp. Curry powder

2 Tbsp. Paprika

1/4 cup chopped scallions

1. In a bowl, combine salt, pepper, coriander and paprika.

2. Coat each filet in spice mix shaking off excess.

3. In a large sauté pan, heat 1/4 cup olive oil on medium high heat. Sear each Salmon filet on both sides until golden brown, approximately 3 to 4 minutes on each side.

4. Remove filets from pan reserving remaining oil.

5. In the pan of reserved oil add olives, garlic, lemon juice, capers, scallions and remaining olive oil. Lower heat to low and sauté for about 2 minutes.

6. Spoon over Salmon filets and enjoy.
