2 cups diced seedless watermelon

½ cup diced mandarin orange

½ cup diced red onion

½ cup peeled and diced cucumber (remove seeds)

½ cup diced yellow bell pepper

1 diced jalapeno pepper

1 teaspoon pepper

2 tablespoons balsamic vinegar

Pinch of salt

This is great with blackened fish of any kind.
