Ingredients:

3 Tbs avocado oil

4 cups thinly sliced yellow onions

1/2 tsp kosher salt

1/4 tsp freshly ground black pepper

1 sprig thyme

1 tsp finely minced garlic

1/2 cup Balsamic Vinegar

2 cups dried mission figs, de-stemmed and chopped

Directions:

Heat oil in large frying pan over medium-high heat. Cook onions, salt, pepper and thyme, stirring occasionally, until onions are soft and caramelized. Stir in garlic. Cook for one minute. Pour in vinegar and 1/2 cup water. Stir in figs. Reduce heat to medium. Cook for 8-10 minutes, stirring frequently, until liquid has reduced and mixture is thick. Discard bay leaf. Scrape mixture into small bowl.
