Babalu becomes 'Ethan's Taco shop' for good cause

Babalu Tapas & Tacos transformed into a pop-up taco shop fundraiser on Wednesday to raise money for a 10-year-old Knoxville boy recovering from a traumatic brain injury.

Babalu Tapas & Tacos transformed into a pop-up taco shop fundraiser on Wednesday to raise money for a 10-year-old Knoxville boy recovering from a traumatic brain injury.

A 2013 car accident left Ethan Woodruff with irreparable brain damage at age six. Since then, he has had to re-learn how to sit up, walk, and talk. 

On Wednesday, Babalu served a dessert Woodruff created, which is a fried flour tortilla topped with Phoenix ice cream, chocolate sauce, strawberries, peanuts and mint.

The restaurant also donated $1 for every taco sold to help alleviate the cost for Ethan Woodruff’s ongoing therapy.

His mom said they're overwhelmed by the support. 

The fundraiser runs at the restaurant located at 412 South Gay Street in Knoxville runs Wednesday from 11 a.m. to 10 p.m.
