Blackberry Lattice Pie


1 1/2 lbs Blackberries

1 cup sugar

1 tb lemon juice

1/4 cup corn starch

2x desired pie crust

1 egg


Preheat oven to 375.

On a medium high stove top, whisk together first 4 ingredients, and bring to a rolling boil. Fill desired pie tin, and roll second crust onto work surface. Cut into 1 inch thick strips and lay onto of pie filling in a basket weave pattern. In a small bowl, whisk one egg, and brush the lattice top with the egg wash. Sprinkle with sugar. Bake for 20-40 or until filling begins to bubble. Remove and cool.
