1 32-oz container plain yogurt
1 1/4 cup honey
6 pints fresh strawberries, sliced
1 ½ cups sugar
1 juice of freshly squeezed lemon
24 frozen phyllo sheets, thawed
Vegetable cooking spray
Blend together yogurt and honey. Chill until ready to serve.
Slice strawberries and combine with 1 cup sugar and juice of 1 lemon. Cover and chill.
Place 1 sheet of phyllo on flat surface and coat with cooking spray, then sprinkle evenly with sugar. Top with second sheet of phyllo and repeat. Then cut stack into 3rds length wise and then in half, creating 6 rectangular stacks. Place stacks a side and repeat procedure until all dough is coated and sliced.
Then you will grill each stack of 2 on medium-low heat for 1 to 2 minutes on each side until lightly golden.
Remove from heat and place 1 grilled stack on each serving plate, top with strawberry slices and drizzle with honey yogurt. Then place second stack on top and repeat.
The phyllo can be grilled ahead time and served at room temperature. Just be sure to allow it to completely cool before covering it in a container.
This recipe makes 12 servings and can be cut back for a smaller crowd.
