1 cup sugar
1/3 cup hot water
1 tsp vanilla
1 cup sifted flour
1 tsp baking powder
1/4 tsp salt
Butter jelly roll pan and line with buttered foil or buttered parchment paper.
Beat the eggs until thickened, gradually add sugar and beat well. Add water and vanilla.
Fold in flour, baking powder and salt.
Pour batter into pan and gently spread. Bake in oven at 375 for about 10 minutes.
Turn out cake onto a towel dusted with powdered sugar. Trim all crusty edges. Roll up cake into towel and let cool completely.
When cool unroll and spread filling on cake then roll back up and place onto serving platter; frost with whipped cream mixture and decorate with fresh fruit.
1 1/2 cups whipping cream
12 oz berry flavored cream cheese
1/3 cup powdered sugar
Beat cream cheese, then add whipping cream..whip, beating cream gradually. Add sugar and food coloring until desired color is reached..do not over mix.
WHIPPED CREAM MIXTURE
2 1/2 cups whipping cream
3 oz colored sugar
Whip cream gradually adding colored sugar until dissolved and whipped cream has stiff peaks.
