Mini Cauliflower Pizza Crusts

Registered Dietitian Angie Tillman shares why she thinks cauliflower is the new kale


1 large head cauliflower

½ cup water

½ teaspoon salt

2 large eggs

2 cups shredded mozzarella cheese

2 teaspoons Italian seasoning

2 teaspoons garlic powder


Using a food processor, grate the cauliflower into fine crumbles. You want the appearance to be like cauliflower "snow". Cook ground cauliflower with ½ cup water and salt in a skillet over medium high heat until most of the water evaporates, about 5-6 minutes. Transfer cauliflower to a clean dish towel and squeeze to remove all moisture. Stir together cauliflower, eggs, mozzarella cheese, Italian seasoning, and garlic powder. Preheat oven to 450 degrees F. Divide cauliflower mixture into 12 balls. Place balls on oiled baking sheet and pat into a thin round about 4 inches wide. Bake about 15 minutes or until golden brown. Remove and preheat broiler. Top pizzas with your desired toppings and broil for 3-4 minutes to heat toppings through. Cool for 5 minutes before serving.
