Cream cheese, 4 ounces
Noble Farms Goat Cheese, 2 ounces
Shredded swiss cheese, 3 ounces
Tennessee shredded cheddar cheese, 3 ounces
Mayonnaise, ½ cup
Smoked paprika, ¼ T.
Onion powder, ½ T.
Roasted poblano pepper, 1 T.
Cayenne pepper, ¼ - 1/8 t. or to taste
Rub poblano pepper with oil and roast. Place in container, cover and cool.
Peel, remove seeds and dice. Set aside.
Mix shredded swiss and cheddar cheese and combine with goat cheese, softened cream cheese, mayonnaise, spices and peppers. Add salt to taste.
Rustic bread (sourdough or ciabatta sliced ½ inch thick), 8 slices
Melted butter, 4 T.
Benton's Ham (shaved), 2 ounces
Pimento Cheese, 1 1/3 cup
Brush melted butter on one side of bread.
Spread pimento cheese onto opposite side of one piece of bread and place bread butter side down in hot skillet over medium heat.
Brush second slice of bread with butter and place in hot skillet butter side down.
Put ham on top of bread.
When cheese begins to melt, put two pieces of bread together to make sandwich.
Cook for two to three minutes.
Flip sandwich and allow to cook for an additional 1 – 2 minutes.
Continue to prepare next sandwich.
