1/2 c. Sugar
1 tsp. Cinnamon
Egg wash (beaten egg with a spoonful of water)
Preheat oven to 425 degrees. Mix together the sugar and cinnamon. Core your apples, leaving them whole. Roll out puff pastry to about 18 x 18 inches. Cut into strips slightly wider than your apple. Brush all edges of the pastry with the egg wash. Set the apple in the center of the strip and fill the center--where the core was--with the cinnamon sugar mixture. Wrap the pastry around the apple, twisting at the top.
Chill the dumplings for 15 minutes. Put them on a heavy baking sheet and lightly brush them with the beaten egg. Bake the dumplings for 8 minutes. Reduce the heat to 400°F and continue cooking until golden, 20 to 22 minutes longer. Don't bake too long or the dumplings may burst.
Easy Caramel Sauce
1 packed cup brown sugar
1/2 cup half-and-half
4 tablespoons butter
1 tablespoon vanilla extract
Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further.
When apple dumplings are baked, cut in half, add a scoop of vanilla ice cream and drizzle with the caramel sauce.
