Blueberry Bread Pudding

Chef Adam Tyler of Gourmet's Market/Cosmo's Caffe shows us how to make Blueberry Bread Pudding.


2# Stale bread cut in 1 inch cubes

2 quarts Heavy Cream

2 cups Confectioner Sugar

3 tablespoons Vanilla Extract

6 eggs

2 pints Fresh Blueberries


Mix heavy cream, sugar, vanilla, and eggs together well in a large mixing bowl. Fold in the bread and blueberries. Let sit for 20 minutes so bread will soak up the custard mixture. Pour bread pudding mixture into a 10x14 baking dish and cover with aluminum foil. Bake in a water bath at 350 for 45 minutes. Remove aluminum foil from dish and bake for another 20-25 minutes until the middle is firm.
