Breakfast Tacos


  • A handful of crushed tortilla chips
  • 1 tablespoon finely minced jalapeno
  • 2 Tablespoons diced tomatoes
  • 2 Tablespoons diced onion, or scallions
  • 2 Tablespoons diced mushrooms
  • 1/2 cup Mexican cheese blend
  • 1 egg, beaten
  • 1 soft flour tortilla
  • 1/2 avocado diced
  • Salsa optional


  1. In a small skillet, over medium high heat, cook onions until tender
  2. Add mushrooms and jalapeno. Cook until soft
  3. Add egg and cook until egg is softly scrambled
  4. Add cheese; stir until slightly melted
  5. Add tomatoes and avocado
  6. spoon into a warm flour tortilla
  7. Top with tortilla chips; fold and enjoy
