Chef Garrett's Pasta San Moritz



4 cups cooked penne pasta
1 cup heavy cream
1 cup chicken stock
½ cup grated Parmesan cheese
¼ cup fresh mozzarella
1 tbsp sun-dried tomato
1 tsp Kalamata olives – chopped
1 cup baby spinach leaves
¾ cup asparagus – blanched
1 tsp dried oregano
1 tbsp fresh basil, torn
Salt & pepper to taste


2 tbsp fresh breadcrumbs
2 tbsp grated parmesan
2 tsp olive oil


Heat chicken stock and cream in a saucepan.As soon as it boils add cheeses and tomatoes. Cook 3 minutes.

Add olives, spinach and asparagus. Cook 1 minute.Add pasta and herbs. Adjust seasonings.

Pour into a buttered casserole dish.Combine topping ingredients and spread over top. Bake 15 minutes at 375 until golden.
