Fish Tacos

Flour Tortillas-- 2 each per person

Fish Strips-- 1-2 strips per person (not minced fish)

Mozzarella, shredded--½ ounce per person

Cheddar, Shredded-- ½ ounce per person

Serve with shredded lettuce and diced tomato, Ranch or Jalapeno Ranch are popular.

Recommended Variations:

Southern Style – with coleslaw


Shredded cabbage with carrots--1 pound

Mayo, light--1 cup

Vinegar, white, apple cider, or rice--¼ cup

Sugar--¼ cup

Celery salt--1 tsp

Black pepper--1 tsp

Maui Style – with fruit salsa

Fruit Salsa:

Mango, diced-- ¾ cup

Strawberries, diced-- ¾ cup

Pineapple, cored, diced-- ¾ cup

Onion, diced--¼ cup

Cilantro, cleaned, no stems, chopped--1 Tablespoon

Honey--1 Tablespoon

1/2 Lime, medium-- squeezed
