Fresh Mozzarella, Tomato, and Basil Bruschetta with Garlic Toast Points

Serves up to 10 guests

Garlic Toast Points:

French Bread Loaf (1 loaf, sliced 1/4" to 1/2")

Extra Virgin Olive Oil, 3/4 cup

Garlic, Chopped, 1 Tablespoon

Salt & Pepper to taste

Preheat oven to 400 Blend olive oil and garlic together. Place bread slices on cookie sheet and brush tops of slices with garlic/olive oil blend. Lightly salt and pepper top of slices. Bake toast points until edges are golden brown and toast points become firm. Set aside to cool

Fresh Mozzarella, Tomato, and Basil Bruschetta

Fresh Vine Ripe Tomatoes, 2 Medium, Diced 1/4"

Sweet Yellow Onion, 1/4 cup, Chopped fine

Fresh Basil, 1/4 cup, de-stemmed, chopped

White Balsamic Vinegar (Regular is fine too), 1/3 cup

Salt and Pepper to taste

Toss ingredients and allow to sit for 1 hour

Fresh Mozzarella (Regular or Buffalo), 8 ounces, diced 1/4")

(Towel dry, dice into 1/4" cubes)

Extra Virgin Olive Oil, 1/4 cup

Coat Mozzarella with Olive Oil, Salt and Pepper

Fold in mozzarella with Tomato /Basil mixture and top garlic toast points generously being careful to use all bruschetta once mozzarella has been added (mozzarella will absorb some of the of the vinegar over time and may become tart)
