Garlic Shrimp and Chorizo Black Lentil Hash

Garlic Rubbed Shrimp

6 ea 16/20 shrimp butterfly (ask you fish monger)

Rub 2 T. of minced garlic all over shrimp, season with salt and pepper. Heat on medium high heat evoo (about ¼ cup ) in a small cast iron pan. Once ho,t put shrimp in back face down, cook 1.5 minutes each side. Pull out and squeeze lemon over the shrimp.

Sweet Potato, Black Lentils and Chorizo

¼ chorizo, dry, diced

1/3 cup roasted sweet potato

Pinch of minced shallot

1/3 cup cooked beluga lentils

½ cup spinach

Saute in order listed, on medium high heat. Season with salt and pepper. Deglaze pan with .5 oz of white wine. Serve topped with shrimp or as a side dish.
