6 each boneless, skinless chicken thighs
2 cups chicken stock
1 head garlic, peeled and sliced
1 med. onion, diced
2 ea. lemons, sliced
3 TB tomato paste
1 bunch fresh basil, chopped
1 cup red wine
1 pint cherry tomatoes
Salt and pepper to taste
Sear Thighs in olive oil and remove from pot.
Add garlic, onion, tomatoes, tomato paste, lemon slices and basil. Saute a minute.
Deglaze with red wine and simmer til almost dry.
Add chicken thighs and chicken stock, cover and simmer on med low about 30 mins.
Remove thighs. Strain liquid and return to pot and reduce by half.
Pour over chicken and serve.
