Hummus Fried Chicken


· The juice of 1 lemon & extra lemon slices for serving

· Olive oil to coat baking dish

· 1 tablespoon dried rosemary

· 1 tablespoon balsamic vinegar

· 1 cup hummus, your favorite flavor

· 1 lb boneless, skinless chicken breasts

· Salt & pepper to taste


· Preheat oven to 450 degrees

· Coat chicken breasts with a layer of hummus

· Place on a shallow baking dish greased with olive oil

· Heavily coat the tops with a second layer of hummus

· Sprinkle lemon juice, rosemary and vinegar on top

· Bake chicken in a preheated oven until it is no longer pink in the center and the juices are clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees.

· Salt & pepper to taste

· Serve with lemon slices and springs of fresh rosemary
