Irish Soda Bread


4 cups all purpose flour

1/4 cup granulated sugar

1 teaspoon baking soda

1 tablespoon baking powder

1/2 teaspoon salt

4 ounces butter

1 1/4 cup buttermilk

1 large egg

1 c raisins*optional

2 tablespoons caraway seeds*optional


Preheat oven to 375 degreesSift flour, baking soda, baking powder, and salt into a large bowl.Add butter to flour and pinch with fingers until chunks are pea sized.*If you are adding raisins and caraway seeds, add now, mix until evenly distributed.Mix egg and buttermilk together and fold into flour mixture until dough is crumbly, but holding together.Turn out onto to counter and knead 10 times until dough forms into a firm round.Press dough down a little to form a thick disk.Brush dough with buttermilk and sprinkle with sugar, I like using coarse raw sugar.Cut a cross shape into the dough using a serrated knife.Bake for about 20 minutes or until bread feels firm in the center and color gets golden brown.Serve with butter.

Yield: This batch makes enough for two loaves. Each loaf will be a little over one pound.
