Mother's Day Barbecue

Strawberry Chimichurri Sauce
1/4 c avocado oil
2 T apple cider vinegar
2 T maple syrup
2 T lime juice
3/4 c fresh strawberries, finely diced
3/4 c Italian fresh parsley, minced
¼ c minced mint
1 clove garlic
¼ c purple onion, minced
½ t cumin
¾ t salt
¾ t ground pepper

Whisk together oil, vinegar, lime juice and maple syrup in a small bowl. Then combine liquid mixture and all other ingredients in a small blender or food processor and refrigerate for 1-2 hours. Spoon over finished steak and grilled pineapple.


Asado BBQ with Grilled Pineapple
1 1/2 – 2 lbs tri tip steak (or any other meat that you prefer)
1 ½ t cayenne
1 ½ t Himalayan pink salt
½ t allspice
½ t powdered garlic
1 large pineapple, peeled and sliced into 1 inch slices, but not cored

In a small bowl combine powdered mixture. Rub the meat down with spices. Heat grill to medium high. Cook steak to desired level. Separately, put pineapple steaks on grill until thoroughly warmed and slightly browned. Remove all ingredients and serve with strawberry chimichurri sauce.
