Potato Cakes

Ingredients:

  • Butter and oil
  • 2 cups mashed potato
  • 2 tsp. minced ginger
  • 1 thai chili (minced) (optional)
  • ½ tsp. turmeric
  • bread crumbs or panko
  • sugar
  • 1 tsp. lemon juice
  • salt
  • ½ cup chopped carrots
  • ½ cup peas
  • 1 small onion diced
  • chopped cilantro

Directions:

  1. Saute peas, carrots, and onions in butter, and ginger. Let cool.
  2. In a bowl combine mashed potatoes, cilantro, cooled vegetables, thai chili salt, sugar and pepper.
  3. Add lemon juice.
  4. Form oval patties.
  5. Dip in bread crumbs and set aside. Repeat.
  6. Add oil to pan. Pan fry all potato patties.
  7. Garnish with cilantro and serve.
