Salted Caramel Chocolate Chip Cookie Bars


1 cup unsalted butter - softened
1 cup brown sugar
1/2 cup sugar
2 large eggs
1 teaspoon vanilla
1 teaspoon kosher salt
1 teaspoon baking soda
2 1/2 cups plain flour
2 cups chocolate chips
1 bag caramels - unwrapped
1 can sweetened condensed milk
1 teaspoon sea salt

Preheat oven to 350 degrees.  Line a 9 x 13 pan with foil and spray very well with nonstick cooking spray.  In a mixing bowl cream together the butter and sugars until fluffy.  Add the eggs, vanilla, soda, & kosher salt.  Mix till incorporated.  Gradually add the flour and mix well.  Stir in the chocolate chips.  Press half the cookie dough into the bottom of the prepared baking dish.  In a microwave safe bowl melt the caramels and milk.  Cook at 2 minute intervals stirring after each until the caramels are melted and smooth.  Pour the caramels over the cookie dough.  Drop the remaining cookie dough by spoonfuls over the caramel filling.  Bake the bars for about 28 minutes.  Sprinkle with the sea salt and allow bars to cool completely.  Lift the bars out of the pan by the foil and cut into squares.  Enjoy!
