Sausage Stew

1 tablespoon oil

1 pound smoked sausage of your choice, halved lengthwise and sliced

1 medium onion, coarsely chopped

8 ounces fresh mushrooms, halved and sliced

1 cup diced bell peppers, red, yellow and/or green

1 clove fresh garlic, minced

4-6 cups chicken broth

2 cups shredded cabbage

1 cup dry lentils, well rinsed and drained

2 tablespoons rice vinegar

1 tablespoon brown sugar

Caraway seeds to taste, optional

In a large soup pot, heat oil and all ingredients. Bring to boil, reduce heat, cover and simmer until lentils are tender. Cook' s note: Add 4 cups broth, initially. Add remaining broth as needed while simmering.
