Squash relish

Melissa Graves from Donna's Old Town Cafe makes a squash relish.


10 cups shredded zucchini (4 lbs) peel if hard and seed if hard

2 pods green or red pepper

4 cups sugar

2 teas celery seed

2 large onions shredded

2 pods hot pepper

3 cups cider vinegar

2 teas tumeric

1 teas nutmeg

2 teas black pepper


Lay out shredded zucchini , salt with 1/3 cup salt. Put in fridge overnight or 4 hours to drain water Drain and squeeze out water from squash mix with peppers and onion in container Mix sugar vinegar tumeric, celery seed, nutmeg ,black pepper and bring to boil Add squash mixture and boil for 3 to 5 minutes Put in jars and seal in water bath
