Summer Peach and Rosemary Canoli


3 peaches diced

2 tablespoons rosemary minced

16 ounces ricotta cheese

16 ounces softened cream cheese

2 cups powdered sugar

1/4 cup peach schnapps liquor

1 tablespoon vanilla extract

2 teaspoons cinnamon

8-10 canoli shells


1) In a large bowl combine cream cheese, ricotta cheese, rosemary, powdered sugar, peaches, peach schnapps liquor, vanilla extract and cinnamon.

2) Mix with large wooden spoon until smooth and no lumps remain.

3) Stuff canoli shell with filling then dust with powdered sugar and enjoy.
