bacon or sausage pan drippings
1/2 cup diced onion
1-1/2 cups diced tomato
2 cups milk or cream
salt, pepper, crushed red pepper
Add onion to pan drippings and saute. Sprinkle in flour and stir until flour is absorbed by the drippings. Add tomatoes, spices and cream or milk; bring to a boil. Reduce heat and simmer until thickened. Serve over biscuits, etc.
Beef stock or red wine may be substituted for the cream.
