Turkey Three Ways

Starting with one 16-pound whole Turkey:

>Brine the Turkey overnight: Stir in 2 cups salt and 2 cups sugar into 1 gallon boiling water until dissolved. Stir one gallon ice water into this mixture. Add this mixture and the whole turkey to a large bucket or cooler, and chill at least 12-18 hours.

>With a Sharp knife, remove the wings, leg quarters and backbone from the bone-in breast section.

Classic Sage-Roasted Turkey Breast:


1 Bone-in Double Turkey Breast, about 7-9#, and the accompanying backbone.

2 large Yellow Onions

1T Kosher Salt

1T Ground Black Pepper

1T Dry Rubbed Sage


>Preheat oven to 350F

>Pat the Turkey Breast dry with paper towels.

>Peel and slice the Onions into 1/2" thick round slices. Lay these slices into a single layer in a large roasting pan.

>Mix together salt, pepper and sage, and sprinkle lightly all over and inside the turkey breast and the reserved backbone portion. IT MAY NOT REQUIRE ALL OF THIS SEASONING. Reserve the rest of the seasoning for another use.

>Place breast and backbone portions on top of the layer of onions, and roast uncovered, 350F, about 2 hours or so, until meat temperature reaches 160F internally.

>Let Turkey cool for at least 20-30 minutes before carving.

>Onions, pan juices and backbone can be used in Gravy or Dressin' recipes.

Garlic-Braised Turkey Legs:


2 whole Turkey Leg and Thigh Quarters

1t Kosher salt

2t Black Pepper

6oz whole peeled Garlic Cloves

4-6c Olive Oil, not too fancy!

6 sprigs fresh Thyme OR 3T Dried Thyme


>Preheat oven to 350F

>Season Turkey Leg Quarters with salt and pepper lightly on all sides.

>Sear Turkey Leg Quarters, skin-side down, in a deep oven-safe pan big enough to hold them both side-by-side.

>Arrange Leg Quarters skin side up in the bottom of the pan, pour in Olive Oil until at least 1/2 covered.

>Sprinkle Whole Garlic and Thyme all around the turkey in the pan.

>Cover and bake at 350F for 90 minutes, or until Turkey meat is fork-tender.

>Serve Turkey whole, or shredded. Garlic and Herb Oil goes great on Dinner rolls, or Roasted Vegetables.

Sriracha Buffalo-Style Turkey Wings:


2 whole Turkey Wings, cut into 3 segments each

(up to) 1c Sriracha Sauce


>Preheat oven to 350F

>Bake wings uncovered in a greased or lined baking pan at least one hour, until skin is just a little crispy. Wing tip segments can be used for Gravy recipes.

>Toss remaining warm wing pieces in sauce to lightly, but evenly, coat.

>Bake an additional 10-15 minutes until just lightly charred.

>Let cool briefly, serve with your favorite wing-dipping sauce.
