Veggie Brown Rice Burritos

1 medium bell pepper, diced

1 cup fresh sliced mushrooms

2 cloves garlic, minced

1 T. olive or veg oil

2 c. cooked brown rice

1 can black beans, rinsed and drained

1 c. frozen corn

1/4 c. chopped green onion

1/2 tsp. cumin

1/2 tsp. salt

1/2 tsp. pepper

4 large tortillas warmed

1/2 c. shredded cheddar cheese


Sauté first three ingredients in the oil, then add next 7. Cook 4 to 6 minutes or until heated thoroughly. Place into tortillas, add cheese and salsa, wrap up and enjoy!
