Chicken Salad Pitas

From "A Festive Affair" the cookbook from the 19th Tennessee State Square and Round Dance Convention held in Knoxville, TN 1993. The recipes come from club members from across the entire state.

3 cups chopped, cooked chicken

1/3 cup chopped onion

3/4 cup chopped celery

1/2 cup golden raisins

1/2 cup dark raisins

1/2 cup chopped walnuts

Mayonnaise, Miracle whip or your choice

Canned pineapple tidbits

Grated Sharp Cheddar

Real bacon bits

Pita bread (white or whole grain)

In a large bowl, mix first 6 ingredients (chicken through walnuts). Add enough mayonnaise to bind. Gently stir in pineapple tidbits. Stuff in pita halves and sprinkle with cheese and bacon bits if desired.
