Museum of Appalachia's Fresh Garden Casserole


2 Zucchini Sliced

2 Squash Sliced

1 Green Pepper cut into strips

1 Medium Onion Sliced

4-5 Large Tomatoes Sliced

½ to ¾ cup Italian Dressing

1-2 Tablespoons Tabasco Sauce

½ Cup Parmesan Cheese

Salt and Pepper to taste

Preheat oven to 375. Grease a 9x13 casserole dish. Layer zucchini, squash, green peppers, onions and sliced tomatoes

Pour on top Italian dressing and sprinkle with Tabasco sauce then parmesan cheese. Add salt and pepper. Bake 45 minutes or until hot and bubbly. Great dish for any garden vegetables including potatoes.
