Power Spinach and Wheatberry Salad

This salad is high protein, high fiber, and full of essential vitamins, minerals, and anti-oxidants.

Fresh spinach, mango, and orange vinaigrette mixed with cooked wheat berries and the super grain quinoa make this salad both colorful and a great source of natural energy. Wheat berry refers to the entire wheat kernel (except the hull). Both the wheat berry and the quinoa may be found on the rice aisle or in the natural foods section of Kroger. This salad is generally available freshly made in the Kroger stores with Chefs in the deli department.

2 cups quinoa cooked and chilled (I prefer the red quinoa because it looks better in salads)

2 cups wheat berries cooked and chilled.

½ cup chopped red onion

½ cup green onions, sliced into thin rings

1 cup craisins

1 lb. baby spinach

1 cup fresh mango, diced

1 cup orange vinaigrette

2-3 Tablespoons orange zest

Cook quinoa according to directions on package and chill.

Cook wheat berries (I cook them in a rice cooker just like brown rice) and chill.

You may use a pre-made orange vinaigrette or make your own with equal parts olive oil, white wine vinegar, a teaspoon of Dijon mustard, and 1 Tablespoon orange juice.

Toss all ingredients together and garnish with orange zest.

You can add more protein with chicken, salmon, shrimp, or crab meat.
