1 2/3 Cup oats
1/2 Cup granulated sugar
1/3 Cup oat flour (oats ground in the food processor until fine like flour)
1/2 Cup coconut flakes
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 Cups dried fruit, nuts, chocolate chips (I use equal amounts of pistachios, dried cherries and chocolate chips)
1/3 Cup peanut butter or almond butter
1 teaspoon vanilla
6 tablespoons melted butter
1/4 cup honey
2 tablespoons corn syrup (optional)
1 tablespoon waterDirections:
Preheat oven to 350. Line an 8 x 8 x 2 baking dish with aluminum foil or parchment paper and coat with non-stick spray.
Mix the dry ingredients together in a large bowl. Stir wet ingredients together in a medium bowl until smooth. Add wet ingredients to dry ingredients and stir until everything is mixed and evenly distributed. Pour into a greased pan and press down until granola covers pan evenly.
Bake for 25-30 minutes or until edges are browned and top is toasty.
Let cool for 10 minutes then remove from pan using foil or parchment sling. Cool for another 10-15 minutes then cut into squares. Wrap squares individually.
Can keep for a week at room temperature or in the freezer for 1 month. Presented by:
