BIG ORANGE (POTATO) TAILGATE SALAD

Ingredients:

3 sweet potatoes (about 3 cups), peeled and cubed
3 TBLS olive oil, divided
Salt & pepper to taste or Cajun seasoning
½ cup pecan halves
4 cups fresh spinach
½ cup real bacon bits
2 cups diced turkey or chicken, at room temperature
¼ cup red onion, thinly sliced
1/3 cup soft goat cheese, crumbled

DRESSING
2 TBLS shallots, minced
3 TBLS apple cider vinegar
3 TBLS apple cider or juice
2 tsp. light brown sugar
1 tsp. Dijon mustard
3 TBLS extra virgin olive oil (evoo)

Directions:

Preheat oven to 400 degrees. Toss sweet potatoes with 1 TBLS oil and seasonings. Spread on a warm foil-lined baking sheet in a single layer and bake for 15 minutes. Add pecans to potatoes and bake an additional 10 minutes.

Add 2 TBLS oil to a small pan. Sauté shallots for about 1 minute. Add vinegar, cider, brown sugar and mustard. Simmer for about one minute. Season with salt & pepper or Cajun seasoning and whisk in 3 TBLS EVOO. Remove dressing from heat.
Combine spinach, bacon, turkey or chicken and onions in a large bowl. Toss with warm salad dressing. Top with sweet potato and pecan mixture and sprinkle with goat cheese crumbles. Serve immediately. Makes about 6 cups.
