Tomato Basil Bisque

1 onion, finely diced
1 Tbsp minced garlic
2 Tbsp flour
4 Tbsp butter
2 Tbsp olive oil
1 cup heavy cream
1 cup half n half
2 cups chicken stock
2 Tbsp balsamic vinegar
2 tsp concentrated tomato paste
1 large can whole peeled tomatoes
1 large can diced (Italian seasoned) tomatoes
1 large can crushed tomatoes
1 Tbsp sugar
1 Tbsp oregano
2 tsp salt
1 tsp pepper
1 sprig basil


In a big pot sweat the onions and garlic with the butter and olive oil. Once translucent, add flour and then balsamic vinegar and tomato paste. Whisk in chicken stock, then stir in all of the tomatoes. Add heavy cream and half n half, sugar, oregano, basil, salt and pepper. Bring to a boil. Reduce and simmer for 15 minutes. Spoon into a blender and puree.
