Chili Cheese Biscuits

2 cups all purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon soda
3 tablespoons butter, cut into small chunks
3 ounces sharp cheddar
1/4 cup finely chopped green onion or sweet onion
1 cup buttermilk
1/2 cup sour cream


Preheat oven to 425 degrees. Lightly spray a baking sheet with Pam. In a medium bowl, whisk together the dry ingredients. Cut butter into the dry ingredients until crumbly. Stir in cheddar cheese and onions. Add buttermilk and sour cream. Stir until just combined. Drop by tablespoons onto the prepared baking sheet. Bake until golden. Serve warm.

Tasty options: Turn oven temperature to broil. Brush golden biscuits with melted butter, sprinkle with your choice of seasoned salt, garlic salt, and/or dried herbs. Sprinkle lightly with shredded pepper jack cheese; return to the oven 1 to 2 minutes or until the cheese is melted. Do not leave the oven unattended. The biscuits will burn in a matter of seconds.
