Super Easy Egg Curry

4 Boiled Eggs
1/2 cup Crushed tomatoes
1 red onion, thinly sliced
2-3 green chillies / jalapeno (optional)
1 tsp cumin seeds
1 tsp turmeric
1/2 cup cilantro chopped
1-2 tbsps olive oil
salt to taste


Saute the sliced onions in olive oil until golden brown, add the cumin seeds, add the pepper & saute some more for a minute.
Add the crushed tomatoes, cook for 2-3 minutes. Add the turmeric powder, salt & a little water & cook for 2-4 minutes.

When mixture starts to boil, add the boiled eggs that may be slit in four, cook a minute, turn off the flame, add the cilantro & it is done.

Serve this yummy curry over plain white rice. Serves 4.
