Hot Chocolate Muffins

2 c. all purpose flour
2/3 c. unsweetened cocoa powder
1/2 to 3/4 c. granulated sugar
2 tsp. baking soda
1/2 tsp. salt
1-1/3 c. milk
1/3 c. vegetable oil
2 eggs
1 tsp. vanilla extract
1 c. miniature marshmallows
1/2 c. semi-sweet chocolate chips


Preheat oven to 400 degrees. Lightly grease a 12 cup muffin pan. In a large bowl, combine flour, cocoa, sugar, baking soda, and salt. Whisk to blend. In a medium bowl, whisk milk, oil, eggs and vanilla until smooth. Add liquids and marshmallows to dry mixture. Stir only until evenly moistened. Do not overmix. Spoon batter into prepared muffin cups, filling only about 2/3 full. Top batter with chocolate chips. Bake muffins until a toothpick inserted in center comes out clean, about 20 minutes.
