Healthy Creamed Spinach

Ingredients:

3 10-ounce packages frozen chopped spinach
1 cup low-fat milk
1/4 cup white whole-wheat flour
1/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. garlic pepper
1/8 tsp ground nutmeg
1 cup 2% shredded Sharp Cheddar cheese, divided
1 cup low-fat cottage cheese
3 large egg whites

Directions:

Preheat oven to 350ᴼF. Coat a 2 qt baking dish with cooking spray.
Thaw spinach in microwave and drain excess water.
Combine milk, flour, and seasonings in small saucepan. Cook over medium heat, whisking until thickened. Remove from heat, transfer to a large bowl, and stir in ½ cup Cheddar cheese, cottage cheese, and cooked spinach.
Beat egg whites in another large bowl with an electric mixer until they begin to foam. Continue to beat until the whites hold their shape—do not overbeat.
Gently fold the egg whites into the spinach mixture and transfer to baking dish.
Bake for 35 minutes and then top with remaining Cheddar cheese. Continue to bake until cheese is thoroughly melted.
