Deviled Eggs

Bacon / Chive Eggs:
12 eggs
4 oz. bacon, finely diced
3 T. fresh minced chives
2 T. mayo
4 T. sour cream
1 T. Dijon mustard
1/2 tsp. cayenne

Smoked Salmon Eggs:
12 eggs
4 oz. smoked salmon, diced
3 T. mayo
2 T. sour cream
1 tsp. Dijon mustard
1 T. fresh dill, minced
1 T. light vinegar, such as rice or champagne vinegar


Boil eggs for 7 minutes. Cook bacon and reserve drippings. Separate eggs, mix yolks with 2 T. bacon drippings, mayo, sour cream, mustard and cayenne. Whip well. Add 2 T. chives and all but 1 T. of bacon pcs. Fill egg whites. Use remaining chives and bacon for garnish.

To make the smoked salmon eggs, boil eggs for 7 minutes. Separate white from yolks. Mix yolks with all other ingredients, except for 2 T. salmon. Fill egg whites and use remaining salmon for garnish.
