Brie and Pomegranate Bites

1 -1.9 oz. package mini fillo shells
1/2 of a 6 oz. log brie cheese
1 pomegranate, seeded
Zest from 2 lemons
Chopped fresh dill
Dash of salt


Preheat oven to 400°F. Place 15 mini fillo shells on a baking sheet. Using half of the brie log, divide cheese in to rounds and cut each in half. Place a half-round in each of the shells. Bake for 5 minutes until brie is melted. Meanwhile, seed the pomegranate, zest the lemon and chop the dill. Combine the lemon and dill with a dash of salt. Remove the brie shells from the oven and top with pomegranate seeds and a little of the dill mixture. Serve immediately.
