Crab Stuffed Mushrooms

1 pound medium mushrooms, stems removed
1 tablespoon butter
1/4 cup finely diced onion
1/3 cup finely diced celery
1/4 cup finely diced roasted red pepper
1 teaspoon minced garlic
2 teaspoons lemon juice
2 ounces white wine
1/4 teaspoon red pepper flakes
1/2 teaspoon parsley flakes
2 teaspoons chives
8 ounces crab
6 ounces softened cream cheese
1/4 cup shredded parmesan cheese
1/2 cup soft bread crumbs
1/4 cup sour cream
1 lemon


Preheat oven to 375”F. Melt butter in a skillet over medium heat and saute’ onion, celery and roasted red pepper until soft. Add in all of the spices; saving 1 teaspoon of chives for topping. Reduce heat. Add 1 ounce of wine, minced garlic, 1/2 the lemon juice, sour cream and cream cheese and stir occasionally until cheese has melted. Spoon mixture into mushroom caps and top with remaining chives and shredded Parmesan cheese, drizzle with 1 ounce of wine, bake 12-15 miunutes or until cheese is lightly browned.
After letting stand for approximately 5 minutes spritz with fresh lemon juice and sprinkle with paprika.
