Pineapple Banana Hummingbird Bread

1 pkg. (2 layer Size) yellow cake mix
1 pkg. (3.4 oz.) vanilla flavored instant pudding mix
1/4 cup oil
4 eggs
1 tsp. ground cinnamon
1 can Dole crushed pineapple in juice (20 oz. can) drained – reserve juice
1 cup ripe mashed bananas (about 2 medium size)
½ cup chopped pecans or walnuts (optional)

Cream Cheese Glaze:
4 oz. cream cheese softened
4 T. softened butter
2 T. milk
1 cup powdered sugar


Preheat oven to 350 degrees.

Combine cake mix, pudding mix, cinnamon, pineapple juice, eggs and oil
In a large bowl and mix until blended about 2 minutes. Stir in crushed pineapple
And mashed bananas and nuts until incorporated.

Pour prepared batter into 5 mini loaf pans or 2 – 8x3 inch loaf pans that have been greased and floured or sprayed with non-stick cooking spray. Bake mini loaves for about 40 minutes and larger loaves for about 60 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.

Cream cheese glaze:
Mix well and drizzle over cooled loaves.
