No Knead Pizza Dough

12.5 ounces all purpose flour
5 ounces durum wheat flour or whole wheat flour
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dry yeast
1 1/3 cup warm water
1/4 cup olive oil
1 teaspoon herbs de provence


In a large bowl, whisk together flours, salt, yeast, sugar and herbs until evenly distributed.
Add lukewarm water and olive oil and use hands or a spatula to incorporate wet and dry ingredients until it resembles a ball of dough.
Cover the bowl with plastic wrap and leave to rise on the counter top for 18-24 hours.
Turn the dough out on to a floured surface.
You can divide the dough into desired portions to make smaller pizzas or use the whole dough for one large pizza.

On a floured surface, roll out dough with a rolling pin to desired thickness and transfer to cookie sheet sprinkled with cornmeal.
Add desired ingredients and bake in a preheated 375 degree oven until crust is golden brown around the edges and cheese is bubbling and browned on top.
Length of time in the oven will depend on size of pizza, keep an eye on it!
