2 medium potatoes (boiled, peeled and mashed)
small onion finely chopped
minced green chili (to taste)
ground red pepper
ground black pepper
fresh lemon juice
1 1/4 cups Chapati flour (substitute 1 cup whole wheat and 1/4 cup all purpose)
1 tsp ground red chili
1 tsp ground cumin
1 tsp turmeric
boiling water to form doughDirections:
Mix filling ingredients and set aside. Place the flour and all dry ingredients in bowl. Add boiling water to form a ball (should be the consistency of pizza dough). Divide dough evenly. Roll each piece of dough into 6 inch circles. Place filling on the circle. Flatten the filling to spread it out on the dough. Place second dough circle on top and seal with your fingers.
Heat skillet. Place oil on skillet then place paratha. Cook for about one minute then flip. Add oil to both sides when flipping. Cook both sides until golden brown.
