Roasted Pear & Apple Salad

1 sweet apple, such as Honey Crisp, Gala, etc.
1 tart apple, such as Granny Smith
1 Bosc pear
1 Asian pear or Bartlett
1 T. each kosher salt & black pepper
1/2 c. thinly sliced red onion
1/2 c. walnut pcs., lightly toasted & salted
4 oz. goat cheese, bleu cheese or parmesan
1/4 c. olive oil

4-5 dried figs, or about 2 oz. fig paste (found in cheese dept. of store)
1/2 c. orange juice
1 tsp. Dijon mustard
1/4 c. balsamic vinegar
3/4 cup (plus or minus) olive oil
kosher salt & black pepper to taste


Combine all dressing ingredients--except olive oil--in blender or food processor. Mix for 45 seconds to 1 minute, until you have a well-mixed paste. With machine running slowly add olive oil. Season to taste with salt & pepper.

Cut fruit in half lengthwise. With a spoon or melon baller remove core. Cut fruit into wedges, place in mixing bowl. Pour 1/4 c. olive oil over fruit, season with salt & pepper. Roast in oven at 375 degrees for 8-10 minutes, until fruit is just soft and lightly brown. Serve over favorite greens, top with goat cheese, red onion and nuts. Drizzle dressing over salad and serve with crostini. Serves 4.
