Cream of Poblano Soup w/Black Bean Grilled Cheese

2 T olive oil
1/2 medium onion, diced
2 Large Poblano Peppers, roasted and diced
4 tortilla shells, blended in food processor
2 T. flour
1 T. cumin
1/2 tsp. chilli powder
1/2 T. salt
1/2 T. pepper
2 cups chicken stock or vegetable stock
1 1/2 c. heavy whipping cream

Black Bean Grilled Cheese:
2 slices hearty bread
Black bean spread (jalapeños, cilantro, and olive oil)
Fresh avocado slices
Caramalized onions
Fresh tomato slices
Habanero White Cheddar Cheese


Saute onion & peppers in olive oil, add flour, and ground tortilla shells, along with seasoning. When onion is soft, add the stock and cook until warmed through. Add cream and heat through again.

Assemble the sandwich; pan sear with butter, and Enjoy!
