Strawberry & Blood Orange Salad

3 blood oranges, peeled & cut into thick slices
1/2 qt. strawberries, sliced--about 2 cups
1/2 c. dried cranberries
1/2 c. toasted & salted sliced almonds
1/2 c. bleu or goat cheese, crumbled

1/2 c. champagne vinaigrette

Champagne Vinaigrette:
2 T. Dijon mustard
1 small shallot, diced
1 tsp. fresh, minced garlic
1/2 c. champagne vinegar
1 cup olive oil
kosher salt & black pepper (about 1 T. salt & 1/2 T. black pepper or to taste)
1 T. fresh minced chives


To make the vinaigrette, place all ingredients except oil & chives into blender, turn on and slowly add olive oil. Blend 1-2 minutes until smooth. Adjust taste with salt & pepper. Add chives and serve. Yield about 2 cups.

To assemble salad, arrange fruit, almonds and cheese over the arugula. Drizzle with vinaigrette.
